    A complete, perfectly balanced South Indian vegetarian meal, based on Ayurvedic principles of health and longevity. It contains all essential macro and micro nutrients for good digestion, tissue strength and vitality, and proper brain function.

    Each full meal consists of: 

    1) a fresh vegetable curry using local, seasonal produce when available, and individually ground spice blends, 

    2) a whole grain dish (which may contain nuts), 

    3) a protein dish of either properly spiced beans, dals (hulled, split beans or peas), or paneer (house made soft cheese cubes from local, fresh milk, and 

    4) a fruit, or vegetable chutney for balanced flavor and enhanced digestion, and nutrient assimilation.
